Quick Rotisserie Chicken and Wonton Noodle Soup
This is a quick soup, created from ingredients from the grocery salad bar and deli counter
Amounts required are “to taste†and depend on how many servings you are making
Ingredients:
1 Rotisserie chicken, shred chicken and discard skin and bones
2 (48 oz) cartons of chicken broth, low fat, low sodium
Bok-Choy, coarsely chopped
1 package of wontons, cut into wide strips (3 pcs per wonton)
From the salad bar at the grocery store
Chopped celery
Julienned carrots
Shredded cabbage
Pea pods
Instructions
Combine broth, celery, carrots and cabbage, bring to a boil. Drop won ton skins one at a time into boiling broth (if you add them all at once, they will stick together) Add chicken, pea pods and bok-choy to the broth. Serve hot.
The vegetables should be crisp, don't over cook.
